Baking

First and foremost, there is nothing glamorous about the way I cook. And unlike the fabulous and addictive cooking shows on t.v., I leave a grand mess after baking. But alas, Monday evening I was invited to my first ever Christmas cookie swap party...Loads of fun! Because of being out of town this weekend, I had to quickly throw a recipe together (again, mom is full of great ideas - she gets full credit for this one). She suggested using 1 cup of peppermint baking chips and 1 cup of semi-sweet chocolate chips instead of two of the latter in a common chocolate chip cookie recipe. Brilliant and festive.  The cookies seemed to have been well-liked!  I have the recipe at the bottom of the blog if you are interested. At the party, each attendee fixed a goody-bag and then munched on the remaining snacks. We also played Fishbowl, which I highly recommend playing next time you are in a large group.

I love attending other hostess' parties as much as I enjoy being a hostess. For all of the Martha's  in the world, there is something valuable about being able to appreciate and enjoy the thoughtfulness and creativity of others. A hostess gives the gift of hospitality and it should always be received gratefully and joyfully. It's not a competition - it's a gift. And I'm thankful for the effort hostesses put into their plans, especially this time of year.

This weekend, I enjoyed working a craft show with my sister and mother. I enjoyed my church's Christmas program Sunday evening, and I enjoyed marking off the last few gifts needed to complete my Christmas shopping. I cannot believe Christmas is almost here!

Peppermint Chocolate Chip Cookies
2 1/4 cups of self-rising flour
2 sticks of butter (softened)
3/4 cup of sugar
3/4 cup of brown sugar
2 large eggs
1 cup of peppermint baking chips
1 cup of semi-sweet chocolate morsels

1. Preheat oven to 375
2. Combine flour, butter, eggs, sugar, and brown sugar (I used a mixer prior to adding the chocolate chips
and peppermint chips) and mix
3. Add in peppermint and chocolate chips, mixing with large spoon
4. On ungreased pan, using round tablespoon, scoop dough onto pan about 2 inches apart (I fit about 12 dough balls onto a pan)
5. Bake 9-11 minutes or until golden brown
6. Allow cookies to cool on wire rack

Makes about 5 dozen cookies

Wow! Well thanks for the shout out and I love what you said about hostessing
being a gift we give/receive rather that a competition. You always have such a gracious perspective, which is one of the many reasons I love you.
